3 ripe bananas (yields about 1 ½ cups mashed)
¼ cup pure maple syrup
2 tbsp coconut sugar
1 tsp alcohol-free vanilla extract
½ cup unsweetened almond milk (or water for fat-free version)
2 ½ cups gluten-free oat flour
½ tsp sea salt (optional)
1 tsp baking powder
¼ tsp baking soda
¾ cup roughly chopped strawberries
2 whole strawberries, thinly sliced, for topping

Directions:

Preheat oven to 350°F/180ºC. Line a 9×5 loaf pan with parchment paper.

Place the bananas in a bowl and mash with a fork or potato masher. Add the pure maple syrup, coconut sugar, vanilla extract and almond milk. Mix well.

In another bowl, combine the oat flour, sea salt, baking powder and baking soda. Whisk until lump free. Add the wet ingredients and fold gently until you get a uniform batter.
Add the chopped strawberries and stir very gently, just enough to incorporate them.

Pour the batter into the loaf pan and bake in the oven for 45 to 55 minutes, until a toothpick inserted comes out clean. Remove from the oven and cool completely before slicing.

Recipe Description

Mash 3 large ripe bananas (360 g) with a fork until creamy, mix them in a bowl with 220 g brown sugar, 120 ml soy milk, 120 g peanut butter, 50 ml seed oil, a vial of vanilla flavoring and a spoonful of white vinegar. Use a whisk.

The easiest banana bread recipe I know of. The ingredients of this cake are blended, baked and that’s it.

Ingredients:

4 eggs
1 cup of sugar
1 stick (90 grams) butter, melted
4 ripe bananas
2 cups flour
2 teaspoons of baking soda

Process

Step 1:Preheat the oven to 180º Celsius and grease a loaf pan.

5. Lactose Free Chocolate Banana Bread

Preparation: 20 minutes
Cooking Time: 45 minutes
Serving(s): 1 serving

1 cup oatmeal, 3/4 cups all-purpose flour, 1 tablespoon of baking powder, 1/2 tsp salt, 1 large banana mashed, 1/3 cup vegetable oil, 1/3 cup almond beverage, 1 teaspoon of vanilla, 2 eggs lightly beaten,4 oz + 2 oz (180 g) coarsely chopped bittersweet chocolate.

PREPARATION
1. In a large bowl, sift the flours, baking powder and salt. In food processor, mix banana, oil, almond beverage and vanilla until smooth. Mix at maximum speed for 2 to 3 minutes, then incorporate the eggs, starting and stopping the appliance successively. Pour this mixture over the dry ingredients. Add 4 oz (125 g) of the chopped chocolate and, using a wooden spoon, mix until the batter is homogeneous, nothing more. Pour the batter into a lightly oiled 8” x 4” (20cm x 10cm) loaf pan.

2. Bake in preheated 350°F (180°C) oven for 45 to 50 minutes or until a toothpick inserted in the center of the bread comes out clean. Place the mold on a wire rack and let cool for 10 minutes. Unmold the bread onto the wire rack and let cool completely. (You can prepare the bread up to this stage and wrap it in plastic wrap. It will keep for up to 4 days in the refrigerator or up to 2 months in the freezer, slipped into a freezer bag.)

3. In a small, heavy-bottomed saucepan, melt the rest of the chocolate over low heat. Drizzle the cooled bread with the melted chocolate.

Good to know

Most chocolates contain modified milk ingredients, therefore lactose. If we must avoid it at all costs, we get a chocolate that does not contain it.
